Turkey! :-)
I made Broccoli Turkey Casserole for the family yesterday. It turned out really well. I did make a couple substitutions. I didn't have cream of chicken soup on hand, so I just used two cream of mushrooms and I cooked the rice in chicken broth to give the dish the desired chicken flavor. I served it with muffins. There was plenty left for hubby to take to work as well as for me to have for lunch also.
I have enough turkey for two more casseroles or a casserole and soup. That portion of meat is now in the freezer for next week.....or, maybe the week after.

We went out for Thanksgiving this year and I really miss the leftovers. The casserole sounds really tasty!
